I’d certainly heard of this soup before but I couldn’t remember having eaten it and I certainly hadn’t cooked it until now.  This version is braised in the oven not boiled on the hob. During cooking it smells of pizza (according to my niece) and it is beyond delicious; our batch was devoured almost instantly.

Yeah, so it takes a long time to cook.  It takes next to no time to prepare.  If you have a slow cooker it’s perfectly do-able as a weekday dinner, just whack it all in before you go to work.

  • 460g canned butter beans drained
  • 350g smoked sausage sliced
  • 2 medium onions finely diced
  • 3 cloves garlic crushed
  • 1 small leek finely diced
  • 2 celery stalk finely diced
  • 1 large carrot finely diced
  • 1 tbsp tomato puree
  • 1 tsp sugar
  • 2 bay leaves
  • 100ml olive oil
  • 2 tsp paprika
  • 1 tsp dried marjoram
  • ½ tbsp thyme
  • 1 level tsp salt
  • Six grinds pepper mill

  1. Fry the sausage in a large pan in a little olive oil until they start to brown, add the vegetables and fry lightly until they start to become translucent. Approximately five minutes. 
  1. In an ovenproof dish add the beans, vegetables, sausage, herbs, spices, tomato puree, sugar, olive oil salt and pepper. Mix well and add hot water, enough to cover the beans. 
  1. Cover tightly with a lid or tin foil and cook for four hours at 180˚c
