This is not mind blowing as far as recipes go, most of us have fried up a courgette before; but teamed with the yoghurty garlicy drizzle it’s too good to tag on as a side note in another recipe write up. If you’re cooking all the other dishes listed under Bulgaria for one sitting as I did it’s seriously worth whipping up a batch of these, they take next to no time to prepare and are flipping tasty.

  • 1 courgette
  • ½ tbsp plain flour
  • 1 tbsp olive oil
  • 2 tbsp greek yoghurt
  • 1 tsp chopped dill
  • Salt
  • ½ tsp white wine vinegar
  • ¼ clove garlic minced

Serves | 4 (as a side dish)

Prep Time | 5 minutes

Cooking Time | 25 minutes


  1. Chop the courgettes into disks, sprinkle with salt and flour.
  2. Fry in olive oil until golden on both sides.
  3. Soak off the excess grease on a sheet of kitchen paper.
  4. Mix together the yoghurt, dill, vinegar, garlic and a pinch of salt and drizzle on top of the courgettes
