This is not mind blowing as far as recipes go, most of us have fried up a courgette before; but teamed with the yoghurty garlicy drizzle it’s too good to tag on as a side note in another recipe write up. If you’re cooking all the other dishes listed under Bulgaria for one sitting as I did it’s seriously worth whipping up a batch of these, they take next to no time to prepare and are flipping tasty.

ingredients
- 1 courgette
- ½ tbsp plain flour
- 1 tbsp olive oil
- 2 tbsp greek yoghurt
- 1 tsp chopped dill
- Salt
- ½ tsp white wine vinegar
- ¼ clove garlic minced

method
- Chop the courgettes into disks, sprinkle with salt and flour.
- Fry in olive oil until golden on both sides.
- Soak off the excess grease on a sheet of kitchen paper.
- Mix together the yoghurt, dill, vinegar, garlic and a pinch of salt and drizzle on top of the courgettes
