Gah it was such a kerfuffle finding a Belarusian pudding to cook. I ended up trawling Google street maps trying to locate restaurants with websites in Minsk, navigating a tonne of links before eventually finding a list of desserts. For the record меню is menu and Десерты is dessert, at least I think it is. I then copied all of the menu items into Google images until I found one which looked appealing. This is it, be warned whilst it undeniably delicious, it is extremely sweet, don’t attempt unless you’re a fan of the saccharine.

 Caramel Apples
  • 3 peeled and diced apples
  • 1 ½ tsp cinnamon
  • 100g caster sugar (3.5oz / 0.8 cups) (superfine sugar, can be substituted with granulated)
  • 3 tsp butter
  • 2 tbsp water
  • ½ tsp salt
  • 1 tbsp sour cream
  • 2 eggs beaten
  • 255g plain flour (7,9oz / 3 cups) (all purpose flour)
  • 350ml milk (0.6 pints / 1.5 cups)
  • 1tbsp caster sugar
  • 1tsp baking powder
 To Cook
  • Oil for shallow frying

  1. To make the batter mix together the flour, caster sugar and milk in a large bowl. Make a well in the centre and pour in the milk and eggs.  Whisk from the inside out, incorporating the wet into the dry until you have a smooth batter.  Leave to rest for 30 minutes.
  2. Coat the apples with cinnamon and cook in a saucepan with 1 tablespoon of the butter until cooked through. Drain off the excess juice and set aside.
  3. In a medium heavy-based saucepan bring the sugar and water to the boil and simmer for 4-5 minutes until the sugar has fully dissolved and turned golden. Remove from the heat and stir in the salt, cream and two tablespoons of butter.  Beat with a wooden spoon until it starts to thicken.  Stir in the apples.
  4. Heat oil in a frying pan and cook tablespoons of batter in batches, until golden on both sides (you’ll need to flip them).
