These don’t look very good I announced as I brought our babkas to the table, but that was totally my fault as I had prepared them the night before to cook on the day and the finely grated potato had turned an unappetising shade of brown, I suspect this also played a part in making this dish heavier than expected. There is no way that potato, lardons, sour cream and onions could not work unless you do what I did, so be sure you have your oven preheated and ready to shove them in the second you’ve finished preparing them.
